ULTIMATE BLT
FOR EACH SANDWICH:
2 slices toasted bread
3 tbsp. Olive Oil Mayonnaise (recipe follows)
6 slices crisp pepper bacon
3 slices tomato, sliced 1/2 inch thick
1 oz. (1 handful) gourmet salad greens mix
Spread toast with mayonnaise, then layer remaining ingredients. Cut in half and serve.
OLIVE OIL MAYONNAISE
(makes 1 1/4 cups mayonnaise)
1 cups mayonnaise
1/4 cup extra virgin olive oil
1/4 tsp. minced fresh garlic
1/2 tsp. ground black pepper
Whisk all ingredients for the mayonnaise together until smooth. Store refrigerated.
