Christmas Peanut Butter Blossoms

The recipe comes from Taste of Home's Contest Winning Annual Recipes 2005.

1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 cup creamy peanut butter, divided
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 cup baking cocoa
1/2 teaspoon baking soda
3/4 cup confectioners' sugar

1. In a large bowl , cream butter, sugars, and 1/4 cup peanut butter. Add egg and vanilla; mix well. Combine flour, cocoa, and baking soda; add to creamed mixture and mix well.

2. Blend confectioners' sugar with remaining peanut butter until smooth. Roll into 24 balls, 1 inch each. Divide dough into 24 pieces; flatten each into a 3 inch circle. Place one peanut butter ball on each circle; bring edges over to completely cover it. (Dough will crack; reshape cookies as needed)

3. Place cookies with seam side down on ungreased cookie sheets. Flatten each cookie slightly with the bottom of a glass dipped in sugar. Bake at 375 degrees for 7-9 minutes or until set. Makes 2 dozen

Caramel-Pecan Pie

Prep: 20 min., Bake: 38 min., Cook: 7 min.

Yield: Makes 8 servings

Ingredients
1/2 (15-ounce) package refrigerated piecrusts
28 caramels
1/4 cup butter
1/4 cup water
3/4 cup sugar
2 large eggs
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 cup coarsely chopped pecans, toasted
Chocolate-Dipped Pecans (optional)

Fit piecrust into a 9-inch pie plate according to package directions; fold edges under, and crimp. Prick bottom and sides of piecrust with a fork.
Bake piecrust at 400° for 6 to 8 minutes or until lightly browned; cool on wire rack.
Combine caramels, butter, and 1/4 cup water in large saucepan over medium heat. Cook, stirring constantly, 5 to 7 minutes or until caramels and butter are melted; remove from heat.
Stir together sugar and next 3 ingredients. Stir into caramel mixture until thoroughly combined. Stir in pecans. Pour into prepared crust.
Bake pie at 400° for 10 minutes. Reduce heat to 350°, and bake 20 more minutes, shielding edges of crust with aluminum foil to prevent excessive browning. Remove pie to a wire rack to cool. Top with Chocolate-Dipped Pecans, if desired.

Yield: Makes 8 servings

I heard this today and had to write it down

As Little Miss Sunshine so eloquently puts it- “Do what you love, and fuck the rest.”

You can do ANYTHING you put your intelligent minds to doing, I swear it. You want to be an astronaut? Go and walk on the moon. You want to repair human hearts for a living? Study hard in med school, ace the MCAT. You want to be an artist? Pick up a paint brush, some clay, or any other medium…and go to town. Don’t let anyone discourage you with anything. Do what you love, fuck the negative people. Let them wallow in it and be miserable. Do what makes you happy-not your parents, your friends, your spouse, your family.

Another Little Miss Sunshine quote: There’s two kinds of people in this world, there’s winners and there’s losers. Okay, you know what the difference is? Winners don’t give up.

At the end of the day, you can bring other people down, or work on yourself.

It’s all a choice.
